Avocado Grilled Cheese – Ultimate Comfort Food Recipe

Those of you who know me well, or just those who read last years “new years” blog post know that my resolutions never start on time. Chronic procrastination? Maybe. Probably.
Anyways, I never start the new year off on time. Sometimes it’s mid-January, but this year it’s February 1st. One of my goals is to blog more (yaaasssss!), and another is to eat more healthy food.
But yesterday it was raining when I made this recipe…so I had to compromise to make healthy comfort food. Thus, this recipe for an Ultimate Avocado Grilled Cheese was born.

Can you say drool or what? I love these little guys so much. It was the perfect lunch to have on a rainy day. I’m in LA, so having a rainy day is practically a celebration!
And definitely an excuse to break out comfort food in the form of this Ultimate Avocado Grilled Cheese.
I had it with some tomato soup the first time I made it, and let me describe it with one word: YUM. I sliced the bread pretty thickly for this version so I could dunk it in the soup!
MMMMMMM. Tomato soup and grilled cheese are a match made in heaven!
The next time I made this recipe I served it with a little salad. It was just as delicious with salad!
Making the avocado grilled cheese sandwich
The recipe is pretty simple, and contains so many yummy ingredients!
- 1 small tomato
- 1 oz Swiss cheese
- 1/2 an avocado
- 4 small slices of bread
- 1 tablespoon of avocado pesto
- a little butter OR some cooking spray
The crucial ingredient in this recipe is the Avocado Pesto. I cannot get enough of this delicious spread. It’s super easy to make in a food processor and only contains a few ingredients – avocados, pine nuts, garlic, basil and olive oil – that’s it!
This packs the Ultimate Avocado Grilled Cheese with tons of flavor. And trust me, a little goes a long way!

First, I’m going to give you two options
- Butter or olive oil? Butter gives the bread a bit more color when cooking, and it makes it a little greasy but oh so yummy. Olive oil yields a sandwich with fewer calories, and takes away the greasy factor.
- Big or little sandwiches? I used four tiny slices, but you could use two normal ones if you want to yield a big sandwich instead of little baby ones. I like the little mini ones though, they’re super cute! Slice away!
A baguette is a good choice because of the shape of the slices when cut. See how I used one for my stoplight baguettes here.
Grease a frying pan with either butter or olive oil. Slather all four slices (or two, if that’s your thing) with avocado pesto and place in the pan on medium heat.
Grate some cheese (I used Swiss) and place on your toasts.
Cut your avocado and place it on the toasts. Next goes the tomato. For a less-drippy-sandwich (anyone who has ever put tomatoes on a sandwich should get what I’m saying here) take the seeds/liquid part off the tomato, and just put the fleshy part on the sandwich.
Close the sandwiches and when the cheese starts to get melty, you’re ready to go!
Boom! Now you’ve got yourself and Ultimate Avocado Grilled Cheese!
