Yogurt Parfait Breakfast Popsicles

These yogurt parfait breakfast popsicles are just the right blend of flavors for the perfect way to start your morning with a vegetarian meal!

Happy June 1st everyone! I always get excited when it rolls around, because so many good things have happened in my life on this day.

One of my best friends was born, another was married, and this June 1st is the day I get to share on of my favorite recipes with you!

And you should get excited, because these are good. Like, finger licking, I need another right now, is this really breakfast…or is it actually dessert good.

The berries are tart and tangy and the yogurt and granola layers are smooth and sweet.  It’s the perfect balance of flavors to wake you up in the morning!

I’ve been in a breakfast rut lately. When I open my fridge in the morning, I look at everything I have and proclaim I have nothing to eat (I do this with my closet too, frequently).

I have been having eggs SO much and I’m just done with them for a while.  

I was browsing Pinterest (check out my Pinterest boards here) for inspiration as I often do when I’m hungry and bored with my routine and I saw a few pictures for breakfast popsicles that sparked my interest.

Popsicles for breakfast?  YES PLEASE! 

I headed out to the store and scooped up all the ingredients I needed to make my new favorite breakfast treat.  Let me tell you guys, this breakfast recipe is so much better than eggs!

The ingredients for this recipe are simple.  You need:

  • 1.5 tablespoon honey, divided
  • 1 cup raspberries
  • 1 cup strawberries, chopped
  • 1 cup blueberries
  • 1.5 cups nonfat greek yogurt (I used vanilla), divided
  • 1 cup Cracklin’ Oat Bran

Now you may be wondering what Cracklin’ Oat Bran is. It’s what I used for the “granola” part of the parfait.

When I went to the store, I wanted to check out the new Kellogg’s Raisin Bran Granola (growing up I was always a huge fan of that cereal, and wanted to try their new line), but they were out of stock in that so I grabbed another cereal I’d never tried before – Cracklin’ Oat Bran!  

I was so curious about how it would taste I couldn’t even wait until I got home to try it – I opened it in the car!  And I’m glad I did. It was delicious.

To make this recipe you need a Popsicle mold. I had been thinking about getting one for a while now and I finally did it. I ordered this one on Amazon, and love it!  

It’s really highly rated, and less than $15. Endless popsicles for summer for under $15?  

I’d say that’s a bargain I couldn’t pass up! I also picked up some Popsicle sticks while I was shopping, because while I like the yellow handles on this mold, I wanted these popsicles to be just red, white and blue!

In order to make them red, white and blue I took each of the berries (separately) and combined with 1/2 tablespoon of honey each. I heated this over a medium high heat until the berries were soft and the consistency of jam.  

I think you could probably put them in the popsicles whole too, but the idea of biting into frozen solid fruit isn’t too appealing to me, so I made this berry jam instead!

If you don’t mind the colors being separated, you could mix them all together, but since I wanted the colors to be distinct, I did the berries one at at time.

I used my mortar and pestle to crumble the Cracklin’ Oat Bran so it was in small chunks and combined it with 1 cup of vanilla nonfat Greek yogurt.  

This is a tool I was given ages ago, and though I don’t use it all the time, when I need it, there’s nothing that can get the job done better!

Once you’ve got your berries and Cracklin’ Oat Bran prepared, the rest is really simple! I did the popsicles in layers, making sure to tap the molds on the counter between each one so there weren’t big air bubbles in the popsicles!  

You can do it in any order you please but I did plain yogurt, then the granola/yogurt, then the strawberry jam, then granola/yogurt then the blueberry yogurt, then the granola/yogurt, then the raspberry jam and then a little dollop of plain yogurt.

Tips for making pretty popsicles

I’ve got a few helpful tips for making the popsicles look pretty. You can just toss it all in there and it will still taste delicious, but I think a nice presentation adds to the enjoyment of food so much!  

If it looks pretty, I want to show it off and share it with everyone. Especially you guys – I get so excited every time I get to share a new blog post with you!

It’s easier to put the layers in the Popsicle mold with an ice cream spoon because the handle is longer, so you’ll have more control over it.  

I also used a paper towel to wipe the inside after each layer if I accidentally got some on the side. It just looks cleaner that way if you do!

Once you’re done with the layering, add a Popsicle stick, and stick your triple berry yogurt parfait breakfast pops in the freezer. I froze them overnight, but I think if you did it for about 6 hours you’d be fine!  

Remove the popsicles and you’re ready to indulge in a sweet treat for breakfast that you won’t need to feel bad about!  

If you have a tough time getting the popsicles out of the mold, just run them under water for about 30 seconds and they’ll slide right out.

I love this new breakfast creation because it takes classic breakfast ideas and turns them into something completely new and creative.

Don’t get me wrong, I love a good bowl of cereal and milk, or a parfait, or even eggs – but when I have them over and over and over again, I find myself wanting something different! These yogurt parfait breakfast popsicles really hit the spot!

Yogurt parfait breakfast popsicle

These yogurt parfait popsicles are impressive looking, but also super easy.

These popsicles are vegetarian, but they're so delicious vegetarians and non-vegetarians alike will enjoy them!

If you follow a vegan diet, you can swap the honey for agave, and the nonfat Greek yogurt for a vegan (dairy free) yogurt.

Prep Time 30 minutes
Cook Time 6 hours
Total Time 6 hours 30 minutes

Ingredients

  • 1.5 tablespoon honey, divided
  • 1 cup raspberries
  • 1 cup strawberries, chopped
  • 1 cup blueberries
  • 1.5 cups nonfat Greek yogurt (I used vanilla), divided
  • 1 cup Cracklin' Oat Bran

Instructions

  1. Heat each of the berries (separately) over medium high heat with half a tablespoon of honey until the berries are soft and the consistency of jam. About 5-7 minutes (for each of the berries).
  2. Use a mortar and pestle to crumble the Cracklin' Oat Bran so it was in small chunks.
  3. Combine the Cracklin' Oat Bran with 1 cup of vanilla nonfat Greek yogurt.
  4. Layer the popsicle ingredients in your popsicle mold. You can do it in any order you please, but I did plain yogurt, then the granola/yogurt, then the strawberry jam, then granola/yogurt then the blueberry yogurt, then the granola/yogurt, then the raspberry jam and then a little dollop of plain yogurt.
  5. Stick in a popsicle stick and freeze for 6 hours (or overnight)
  6. Take out and enjoy!
  7. If you have a hard time getting the popsicle out of the mold, you can run it under hot water for about 30 seconds and it should slide right out.

    I believe you mean freezer. Everyone knows you can’t make a popsicle in the refrigerator!

    Thanks for the recipe – they do look delish but… they are not Vegan. They are vegetarian. They aren’t vegan because recipe contains honey & (I’m guessing) a cows milk based yogurt.

    To be vegan: exchange honey for agave nectar and a yogurt that is made with plant based-milk like oat, almond or soy.

    Quick rule of thumb to qualify for “vegan”
    it can’t “be an animal” or be “a by-product” of any animal (or insect), think honey and silk, animal based milk, eggs, etc.
