I don’t know about you, but I LOVE sushi.  I love being adventurous and trying any different kind of sushi I can find.  However, when I decided I wanted to make it at home, I thought I’d start with something simple and classic like the California Roll.

To start you’ll want to make your sushi rice.  My roommate has a rice cooker that I looooooove using – it makes rice way easier than on the stove top.  I’m sure I’m no the only one who struggles to make perfect rice.  If you’re like me, investing in a rice cooker is definitely the way to go.

While your rice is cooking, combine the rice wine vinegar, sugar and salt in a saucepan and stir until dissolved.  Once the rice has finished cooking, combine with the rice wine vinegar mixture and that will be the base of your sushi rice.  Then you can prep your other ingredients.  Thinly slice your avocado and cucumber. I like to squeeze some citrus (either lemon or lime) on the avocado to make sure it doesn’t brown.

It's really easy and you will wow any guests you have over! www.JessExplainsItAll.comNow is the fun part – you get to assemble the sushi!  I was recently given a set of sushi mats from BambooWorx that I used for this recipe and they’re 100% crucial to the sushi making process.  (Plus, the set is on sale right now for under $8, what a steal!) I like to wrap my sushi mat in cling wrap to make clean up easier!  You start by putting one sheet of nori on your sushi mat (rough side up). Then you’ll wet your hands slightly with water (from that bowl of cold water I mentioned in the ingredients) and spread about 1/2 or so of sushi rice onto the half of the sheet of nori closest to you.  Wetting your hands just makes the rice easier to work with (and less sticky).  If you don’t want to use your hands the set of sushi mats I have also has a rice spreader!  Once that’s done, sprinkle sesame seeds on top of the rice.

It works best if you keep the softer ingredients (avocado) closest to you so you can make sure that it doesn’t ‘squish’ out of the roll.  Take the side of the sushi mat that is closest to you and begin to fold it over, making sure to keep the ingredients in place.

Note:  If you want the rice on the outside of the roll make sure that side is down on the mat, and if you want the nori on the outside, make sure that side is down on the mat.  After trying it both ways, I find it’s easier with the nori side down, and the rice side up.

You’ll need to apply pressure to compact the ingredients inside, but you want to make sure you don’t squish it too hard.  Continue rolling the mat until all the nori is rolled around the sushi.  Wet a sharp chef’s knife and in a long slow motion, make sawing cuts to the sushi log you’ve created. You should have 8 pieces.  Continue this with the other pieces of sushi until you have finished all of the rolls.  Serve immediately with soy sauce for dipping, fresh ginger and sprinkle with sesame seeds.

Note:  If you want a visual representation of how to do this, check out this video, the guy walks you through it with different camera angles and is so helpful.  The only thing I found was that I needed to use a whole sheet of nori instead of half of a sheet (I had too many squishing issues with just a half a sheet).

And that’s it!  Now your sushi is done and you can wow your guests (and yourself) with it!  I’ll be honest, it took me a couple of tries to get the sushi rolled neatly, but once you get the hang of it, it’s easy!  Keep trying and don’t give up!  It’s so tasty, it’s definitely worth it.

How To Make Homemade Sushi: The California Roll

Serves: 5 rolls (8 pieces each)
Ingredients
  • 1.5 Cups of Short Grain Sushi Rice
  • 4 Tbsp Rice Wine Vinegar
  • 1 Tbsp Sugar
  • 1 Tsp Salt
  • 1 Pack of Imitation Crab (Leg Style)
  • ½ Avocado (thinly sliced)
  • 1 Lemon or Lime
  • 1 Large Cucumber (thinly sliced)
  • 5 Sheets of Nori
  • 1 Small Bowl of Cold Water
  • Sesame Seeds (to garnish)
  • Soy Sauce (to serve with)
  • Pickled Ginger (to serve with)
Instructions
  1. Prepare 1.5 cups of short grain sushi rice in a rice cooker.
  2. While that is cooking, combine the rice wine vinegar, sugar and salt in a saucepan and stir until dissolved.

  10. When the side of the sushi closest to you touches the nori, gently squeeze it all together. You'll need to apply pressure to compact the ingredients inside, but you want to make sure you don't squish it too hard.
  11. Continue rolling the mat until all the nori is rolled around the sushi.
  12. Wet a chefs knife and in a long slow motion, make sawing cuts to the sushi log you've created. You should have 8 pieces.
  13. Continue this with the other pieces of sushi until you have finished all of the rolls.
  14. Serve immediately with soy sauce for dipping, fresh ginger and sprinkle with sesame seeds.
