Cinco De Mayo Recipes – Spicy Tasty & Easy Mexican Food and Drink

Hey everyone! It’s almost that time of year again – Cinco de Mayo!  If you enjoy entertaining for this popular Mexican holiday, check out these tasty Cinco de Mayo recipes.

It’s amazing to think almost a year has passed since we celebrated this holiday last year.  So much has happened in my life!  

But I suppose that’s true with everyone, right?  Last year I worked at a Mexican restaurant, and we were running around trying to keep up with everyone coming in the door…and this year?

Well, this year I’ve got the day off and I’m going to spend all of Thursday taking photos for some new fashion content I’m very excited to share with you.  And after all that blog work, I’m sure I’ll be hungry (I mean, always) and I’ll want Mexican food since it’s Cinco de Mayo!  

BUT having worked in a Mexican restaurant last year, I’m just not sure I want to go out and battle all the lines and craziness that accompany this holiday.  (Even if you can get really cute things like these beer sarapes that I got last year from my job!)

So I’ve compiled a list of my five favorite Cinco de Mayo recipes to make at home!  If you’re also staying in, check these out.  They’re packed with flavor, and super fun to make!  

Plus, you can enjoy them from your couch while watching whatever you’re binge watching on Netflix (Game of Thrones anyone?!?!?!?)  I’m one episode behind and it’s killing me!).

Let’s start with something easy and delicious like my recipe for 30-Minute Easy Chicken Fajitas!  They are delicious, quick, and boyfriend approved!  Honestly guys, I’m not sure you want to try these.  

You’ll get spoiled and be disappointed when you get fajitas elsewhere (true story). Aw heck, who am I kidding?!  Try these!  They’re delicious!

Beef taco lettuce wraps

Is 30 minutes too long?  Do you want to make something that takes virtually no time to cook?  Well you’re in luck!  You can try this recipe for Beef Taco Lettuce Wraps from Recipes Just 4 U!  

You just cook the meat according to the directions in the recipe and toss it in the romaine leaves with all of the yummy toppings!  Check out her tutorial – it’s super quick, and super delicious!

Michelada cocktail

Feeling thirsty after looking at those yummy Cinco de Mayo recipes?  Me too, lets take a pause and drink a Michelada together!  Always the Holidays has a delicious recipe for this spicy treat.  

If you’ve never had a Michelada (and you like drinks that have a little bit of a spicy kick) I recommend trying one!  The great thing about making them at home is that you can adjust the level of spiciness to your taste.  

Much better than going out and paying way more for one you might not like, right?  Plus, if you make them at home you can put them in these cute Mason jar mugs!

Speaking of heat, if you like a little bit of spice, you’re going to love love love my recipe for Mexican Mac and Cheese.  Guys, this stuff is the holy grail of comfort food for me.  The chorizo gives it a nice spice, and the homemade cheese sauce makes you feel like a five-star-chef (even though it’s ridiculously easy to make)!  

If you like mac and cheese and you like Mexican food, this recipe is magical – and the one for you.  I promise.

Cinco de Mayo recipes - Turkey enchiladas

Maybe you’re looking for something a little lighter?  These Skinny Ground Turkey Enchiladas from The Gardening Cook are amazing, and so much healthier than eating them out at a restaurant!  

Even though these are “skinny” enchiladas, I promise, you’re not sacrificing any of the flavor.  Plus, just look at that photo!  I’m sold, are you?
