Easy Chicken Fajitas – Quick and Tasty Mexican Recipe

It is DELICIOUS, easy, and if you’re not taking like 8 billion photos, it’s quick too!  But because I love you guys, I did take 8 billion photos.  Yahoo!

First thing’s first.  Before you start doing anything productive, you should probably get some snacks.  CHIPS AND QUESO AND BEERS FOR THE WIN!  

I mean, this step is clearly optional, but I think you’ll be happy you did (if you’re of legal drinking age, of course.  Children, just stick to the chips and queso).

Making these easy chicken fajitas

After some snacking, first step is to assemble all your ingredients:

  • (1.5 lbs) 2 large chicken breasts, sliced into strips
  • a package of medium sized flour tortillas
  • 1 packet of classic fajita skillet sauce
  • 1 medium yellow onion, sliced into strips
  • 1 poblano pepper, sliced into strips
  • 1 red bell pepper, sliced into strips
  • 1 orange bell pepper, sliced into strips
  • 2 tablespoons of extra virgin olive oil, divided
  • lots of cilantro
  • limes

Now that you’ve got your ingredients together, keep snacking.  Kidding, kidding… kind of.  I mean, just loooooooooook at all that yummy goodness!  Ok ok, back to the recipe.

This is what you’ll be making!  Just a little teaser photo to get your excited!  Don’t worry, you’ll be on to the main event soon.  

The actual cooking process takes less than 30 minutes including prep time!  To start, you’ll need two 12″ frying pans.

cooking chicken in a panIn the first frying pan, add one tablespoon of extra virgin olive oil, and place your chicken strips across the pan.  Season with salt and pepper.

In the second pan, add another tablespoon of extra virgin olive oil.  Add the onions, and alllllllll of the varieties of pepper and mix!  You should do this at the same time as the chicken.  

It will take about 7-10 minutes.  But you’ll know when it’s done because the onions will begin to be translucent and the peppers will be soft but not too soft, you still want to have a crunch to the fajitas (if they’re too soft the fajitas get soggy).  The chicken will also be cooked through.

Once the peppers and chicken are cooked (but not overcooked!) combine and add the Fajita Skillet Sauce.  Mix until it is all coated and the sauce has started to absorb into the chicken (just a few minutes).

While the Fajita Skillet Sauce is absorbing into the chicken and peppers, start microwaving your tortillas.  You can do two at a time for 15 seconds in the microwave.  

Once they are microwaved, place on one plate and cover with another plate.  This will keep them warm and soft so you can make the fajitas as you go, and you don’t have to make them all at once.

I like to just use the chicken, veggies, cheese, avocado, cilantro for each fajita.  Then I squeeze a little lime on them!  But if you want to add other stuff, salsa, sour cream, etc etc, go for it.

I personally think these have enough flavor that they don’t need salsa but to each their own!

The best thing about these fajitas are that they make excellent leftovers!  If you can manage not to eat the entire way through them when you first make them, that is!  They have even more flavor the second time around because they’ve been sitting in Tupperware absorbing all the rest of that fajita skillet sauce.  

mmmmmm! Serve with some chips and salsa and you’ve got a quick and easy lunch or dinner.

Ingredients

  • 1.5 lbs chicken breasts, sliced into strips
  • 8 flour tortillas
  • package of fajita skillet sauce
  • 1 medium yellow onion, sliced into strips
  • 1 poblano pepper, sliced into strips
  • 1 red bell pepper, sliced into strips
  • 1 orange bell pepper, sliced into strips
  • 2 tablespoons of extra virgin olive oil, divided
  • 1/4 cup cilantro
  • 2 limes
  • 1/2 cup cheese

Instructions

  1. Gather and prepare all your ingredients.
  2. Set up two frying pans over medium heat and put one tablespoon of olive oil in each.
  3. Put the onion and all varieties of peppers in one skillet.
  4. Place the strips of chicken in the other frying pan and season with salt and pepper.
  5. Cook the veggies and chicken until the chicken is cooked through and the onions begin to turn translucent. Be careful not to overcook, because you want the peppers to still have a slight crunch to them. This should be about 7-10 minutes.
  6. Once you've done this, combine the veggies and chicken and add the Fajita Skillet Sauce. Mix until everything is coated, and cook until it starts to absorb and become less saucy. This should be about 5 minutes.
  7. Begin to microwave the tortillas. Cook two at a time for 15 seconds and transfer to a plate and then cover with another plate to keep the heat in.
  8. Once everything has cooked, begin assembling the fajitas. Go crazy! Add cheese, lime, avocado and cilantro and enjoy!
