Peach Bruschetta – Easy No Bake Appetizer Perfect for the Heat

What is Bruschetta?

Bruschetta is toasted Italian bread that is normally topped with olive oil and typically served with garlic and tomatoes.  Originally, it was intended to be a fairly simple dish, with little toppings.

However, like many other foods, once adopted into the American cuisine, it has gone through many changes. Lots of chefs and restaurateurs have taken this simple appetizer or meal starter and turned it into a complex dish with loads of toppings.

Today, I am taking a bit of leeway by adopting the traditional recipe to a no bake appetizer that uses a popular summer fruit as it’s topping. It is still light and simple but adapted to being a no bake recipe which is great for the summer heat.

This peach bruschetta is perfect for summer. Team it up with one of these sinful peach cocktails the next time you entertain.

OK, OK, OK, so maybe it’s not over 100 º, but it sure feels like it when I turn the oven on!  So during the summer I love to cook without using the oven or stove – which actually has led to some of the most delicious and easiest appetizer recipes I’ve made!

I was feeling particularly inspired the other day to try a new recipe, and most importantly a new no-bake recipe.  I am very happy to say that inspiration led to the creation of this ridiculously easy 6 ingredient appetizer that can be made in under 10 minutes.  

Quick?  Check.  Easy?  Double check.  Delicious?  TRIPLE CHECKKKKKKK.

Only 6 ingredients for this no bake appetizer!

As I mentioned before you only need six ingredients.  Perfect, right? 

  • 1/2 Cup of Whipped Cream Cheese
  • 1/2 Cup of Goat Cheese
  • 1 Tbsp Fresh Basil, Chopped
  • 1 Large French Baguette 
  • 3 Tbsp Honey (approximately)
  • Fresh Peaches

I have used a lot of low fat products in the past, and really love them.  I am very focused on trying to maintain a healthy body, because we only get one!  I think that since we only have one body, we should treat it well.  

Using a whipped cream cheese makes the recipe lower in calories which I love. (I see you approaching, swimsuit season!)

I headed out to the store to find everything I needed (except for the basil, I have that growing on my balcony at home).  It was probably the quickest shopping trip I’ve ever had!  

I swooped up the bread, honey, goat cheese, and whipped cream cheese and was ready to go!  I was in and out in like 15 minutes… and anyone who has ever been grocery shopping knows that is a miracle.  hahahaha I can get lost in there for hours!

Look at those pretty little things!  Best part about them?  NO OVEN.  I’m currently sweating as I’m typing with a fan beside me, so I’m a HUGE fan of no-bake everything right now.  To make these little babies, first thing’s first – you’ve gotta slice your baguette!  

You may have some bread left over depending on the size of your baguette – that’s ok, you can save it for another recipe – Be sure to check out my sourdough baguette recipe too.

Or you can eat the left over bread, whatever you want, I’m not judging.  Later in the week I’m making homemade croutons with my leftover bread…but I have to do it in the oven, so I’m waiting for a cooler day.

Once your baguette is sliced, mix your whipped cream cheese and goat cheese until smooth.  I find this is easiest with a fork – I highly recommend not using a whisk, it’s just too messy and the mixture gets all stuck in the middle of the whisk.  (don’t ask me how I know this!)

Sprinkle in your chopped basil and mix until it’s well incorporated in the cheese mixture.  Then scoop a dollop onto each slice of baguette and spread until each slice is coated in the cheese mixture.

Next, top each piece of bruschetta with the namesake ingredient – a peach slice!  Peaches are perfectly in season right now, which is what makes this recipe so yummy.  They’re juicy, fresh and full of flavor!peaches on bread with honey

Then drizzle with honey!  I just did a little squeeze out of the bottle, which is why my recipe is an approximate amount of honey.  You don’t need a ton of it, because the peaches are naturally sweet!  And that’s it.  You’re done!  

This peach bruschetta recipe would be perfect if you need to throw a quick appetizer together quickly for friends coming over, or for a last minute potluck invite.  Or if you’re me, this is perfect for a light breakfast, lunch, or a midday snack…or both (they’re just so good!).

If you’re doing a dinner party or something and want to prep this recipe ahead of time, that’s totally fine! I’d suggest making the cheese mixture and slicing the peaches ahead of time and waiting until you’re ready to serve them to slice the bread and layer them.  

That way, the bread stays soft, and your peach bruschetta is still yummy!  Plus, the honey absorbs pretty quickly into the baguette, so if you want to have a pretty drizzle on your presentation, it’s good to wait until right before to prepare them.

I love this new no-cook snack, and can’t wait to enjoy them on my next night off with a glass of wine in my hand, and my feet in the pool.  Nothing says summer more than that!

Easy No Bake Peach Appetizer

Ingredients

  • 1/2 Cup of whipped cream cheese
  • 1/2 Cup of Goat Cheese
  • 1 Tbsp Fresh Basil, Chopped
  • 1 Large French Baguette
  • 3 Tbsp Honey (approximately)
  • 3 Peaches

Instructions

  1. Prepare your ingredients: Slice the baguette into slices about half an inch thick, chop the basil and slice the peaches.
  2. Mix the goat cheese and whipped cream cheese until combined and smooth.
  3. Add in the chopped basil and mix until basil is evenly throughout the mixture.
  4. Place a dollop of the herbed cheese mixture on a slice of the baguette and smooth over until the baguette slice is evenly covered. Repeat until the cheese mixture is gone (you may have a little bit of baguette left depending on the size of your baguette).
  5. Top each slice with a slice of peach and drizzle with honey.
  6. Serve immediately.
