It’s no secret that I love avocados.  I love avocados like my mum loves peanut butter.  I know you don’t know my mum… but she REALLY loves peanut butter.  Growing up, she had me convinced that peanut butter had it’s own spot on the food pyramid.  Well, I love avocados like she loves peanut butter.  I mean, who doesn’t love avocados?!

So one day when I got a craving for avocados and pasta at the same time, I thought there was no better way to combine the two than to make Avocado Pesto.  I think this recipe for avocado pesto is probably the best decision I’ve ever made when I was that hungry.  Normally when I’m as hungry as I was, I do silly things like going grocery shopping and impulse buying oreos, fig newtons and goldfish, or ordering embarrassingly large amounts of lo mien from my local Chinese restaurant.  Well this time I didn’t do any of those things!  I got out the food processor and created a creamy treat!

I love using my food processor.  I got it as a grift for Christmas a couple of years back, and it really comes in handy for making quick and healthy versions of processed foods you’d find in grocery stores.  (How many times have you read the ingredients for things like peanut butter or pesto or hummus, and there have been things you had no idea what they were, or why they were in your food?) As soon as I got this food processor it became easy to make healthy treats (with no crazy additives) like my recipe for Homemade Dark Chocolate Peanut Butter, and now this Avocado Pesto.

Ingredients:

  • 1 avocado
  • 2 cups of fresh basil
  • 1/2 cup of pine nuts
  • 3 cloves of garlic
  • 1/4 cup of olive oil

Food processors really are the way to go – they take all the work out of cooking!  I couldn’t even imagine the days of pre-food processor cooking where you’d have to chop everything very finely and then use a mortar and pestle to make a smooth sauce.  That would be so tedious!!

Directions:

  • Put the avocado, basil, garlic and pine nuts in a food processor, blend until there aren’t any huge chunks.
  • Add the olive oil and blend until smooth.
  • Enjoy!

It's vegan and gluten free too!The recipe yields 16 tablespoons of yummy goodness.  If you do Weight Watchers, each tablespoon has a points plus value of 2!  It’s vegan, gluten free, dairy free and vegetarian.  I remember when i used to be vegan always being unpleasantly surprised that all the pestos I found contained cheese… So this one has a little shout out to my former meatless days!

Tip: When storing your Avocado Pesto, place cling-wrap directly on the pesto.  If you make sure the air doesn’t get to it, your pesto will stay greener, longer!

The best part?  It goes well on anything and everything, pasta, toasted baguettes, sandwiches, a spoon by itself…the spoon method was tested multiple times throughout the recipe.  I tried it as a pasta sauce, and it was just lovely.  I added a couple tablespoons to whole wheat pasta and threw in some chopped cherry tomatoes.  Delicious!

Serves: 16 tablespoons
Ingredients
  • 1 avocado

Instructions

Notes
When storing, place cling-wrap directly on the pesto. This will help keep it greener for longer!
